Tasting Notes

Delicious with mushroom pasta, porcini risotto, and veal. Also wonderful with roasted poultry, game, and aged cheeses. Serve at 17 °C.

Food Pairing

From a creamy risotto ai funghi to a slow-cooked brasato or game dish: this Barolo loves dishes with depth. Serve at 18 °C, preferably alongside a fine aged cheese.

About the Winery

Dangling on the southern edge of the Barolo appellation lies the four-generation-old winery Principiano. A relatively unknown gem, but a producer with a distinct style and great potential. Giuseppe and his son Francesco run the estate with passion and love for their craft. Moreover, they would much rather have their boots in the vineyard than be at a wine fair trying to sell their wines.

They own about 8 hectares of vineyards within the municipalities of Monforte d’Alba and Serralunga d’Alba. A portion of the grapes is bottled under their own label, while another part is sold as sfuso – bulk wine.

The approach is traditional. The wines mature in large 25 hl Slavonian oak botti, keeping the character of the grape and the terroir central. The range is broad, but the style is recognizable: pure, precise, and robust wines with structure and backbone.

These are the wineries we love. Rolling up their sleeves, working in the vineyard, and simply making great wine. No need for outward display, just proud of a good product. That’s what we love. Chapeau.

Vineyard

Sourced from Boscareto in Serralunga d’Alba, a high-altitude MGA known for its powerful, tannic Nebbiolo. Wines from this vineyard combine structure and tension with depth and great aging potential.

Vinification & Ageing

Traditionally made and aged in large 25 hl Slavonian oak barrels. This slow maturation supports the structure and allows the fruit and terroir to remain central.

Ageing Potential

A powerful, tannin-rich Barolo that develops increasing softness, depth, and complexity with bottle aging. Lovely to drink from approximately 2028 and can be cellared until 2038–2042.
